Shrimp Noodle Bowl with Witzi’s Grain Free Granola
Ingredients:
• 1 lb fresh or uncooked & frozen shrimp
• 4 Cups chopped Romain lettuce or other salad greens
• 1 Cup chopped Radicchio
• 3 Radishes, sliced thin
• 3 carrots, sliced thin
• Rice noodles (any shape or size)
• Juice from ½ lemon
• 1 tsp Dill Weed
• Avocado Oil
Dressing
• ½ Cup Buffalo Sauce (we like Primal Kitchen)
• ½ Cup Avocado Mayo (We like Primal Kitchen)
• 1 ½ T Brown Mustard
Topping
• 1 Cup Witzi’s Golden Granola
• 1 Avocado, sliced
Instructions:
1. Clean, dry and chop the salad ingredients. Distribute into 4 bowls.
2. Mix the sauce ingredients and set aside.
3. Slice the avocado and set aside.
4. Prepare the noodles as suggested, then rinse with cold water, and add to salad bowls.
5. Rinse and pat dry shrimp.
6. Squeeze lemon juice onto shrimp and sprinkle the dill.
7. Heat a medium skillet to medium-high, then add 1T avocado oil.
8. Add shrimp to the skillet and cook until pink, stirring occasionally. 3-5 min depending on the size.
9. Add the cooked shrimp to the bowls.
10. Top with avocado and Witzi’s Grain Free, Gluten Free Granola!
